I've noticed a change in handling just with a swapping to a different rubber compound and thread pattern. When you go messing with geometry I’d expect it to have a huge effect.

Exactly. I'm always happy to entertain other members whilst I wait for paint to dry. However, when the shop is 56°f, I tend to have to entertain longer than I would normally like though.
 
one last Bimota question, I see that they have a fully adjustable rake and trail, but comparing it to a normal suspension it lacks steering head off set. How would a bike handle with zero offset?
