omg, dude - previously said come up here and we’ll take you to our fav sushi place, but mexican? we’ve got that nailed. can either take you to an AWESOME place, or eat in. chile colorado is one of my specialties. and is absolutely heavenly, if i do say so myself.
Sounds exceptionally delicious! Both of my sisters married Mexican gentlemen. My younger sister, whose husband passed away - that man filled a room with love wherever and whenever he entered - RIP David - had a mother in law, Maria, who also regrettably has passed on. RIP Maria, you beautiful lady.

Anyway, every time I told my sister that we were coming to visit, she would tell Maria (David's mum) that Kenny was coming up. I am sure I have told this tale before, but that was Maria's (David's mom) cue to get busy with Chile verde. Oh my (expletive deleted, respect sir) God, her Chile Verde was out of this world. David's birthday was in January, and one year in Lodi it was cold as hell. Maria had Chile verde on the table, and when we walked in, David was absolutely sweating his balls off. I sat down and lost mine as well. That lady could cook, and regrettably I never got her recipe. Of course, she cooked by feel and instinct, nothing was written down. Sadly, I made a decent facsimile one time but D I D N ' T W R I T E A N Y T H I N G D O W N. Sort of like the .223 handload that I worked up once, which is a whole different tale. Sigh.......

@900ss Mexican food is my absolute favorite. Grew up in New Mexico and my grandmother’s cooking is a memory that is so firmly entrenched in my mind…it a happy place. The smells the heat, I miss that woman. My mom was pretty good at repeating the family recipes too. But like your brother in law’s family, it was all cooked by memory and sadly I have nothing to work with to recreate those masterpieces.

Speaking of being fit, my family’s food was the absolute opposite of food for fitness.
 
This is an interview with an iron man athlete who was vegetarian / vegan then shifted to keto / carnivore and did a 2:07 marathon with no carbs

 
The Genesis of my faux Chile verde was a salsa verde that I made that had poblanos, as well as a few other chiles. After tasting it I bought some pork and went to town, Man, was it good.
